Food Value of Pacific Saury

The saury are one of the species of the saury in the subfamily Muscatidae. Its scientific name, Cololabis saira, was taken from the name of this fish species in Kii Peninsula, Japan. Chinese and Japanese characters are saury, probably due to their slender shape and the production of the season in the fall. Saury in some parts of East Asia is a very common species of food.

The fish body is elongated and slender, with flat sides. The two pods extend forward and shorter, and the lower chin is more prominent than the upper pod. The dorsal fins and anal fins are located behind the body and have no hard spines. They have small fins at the back; the dorsal fins have 10 to 12 soft strips and 6 to 7 small fins, and the anal fins have 12 to 14 soft strips and 7 small ones. Off fins; pelvic fins located slightly behind the center of the body; caudal fins deep split; vertebrae of about 63; body was thin circular scales; lateral line lower, near the ventral edge. On the back and sides of the body are dark gray cyan, abdomen silver-white; body side of the center with a silver-blue longitudinal band. Up to 35 cm in length.
