Duck egg storage and preservation

Ducks have a strong seasonality in egg production, and they often have more than enough production during the peak season, and prices fall. In the off-season, they are under-supplied and have a long shelf life. The grain storage method is generally suitable for storing ducks in small quantities before they are sold. Fresh and fresh eggs are put into dried grains such as beans and cereals. A layer of fresh eggs is buried under a layer of grain. The uppermost layer of grain should be slightly thicker to prevent egg damage. So that the egg will not deteriorate in a longer period of time. Check once every half month. Use rice to store fresh eggs. During the inspection, the rice must be sunned for a few hours to prevent insects on the rice. Where the sun must be cool and then release the eggs. Generally this method can keep fresh for about six months. Grass ash storage method A layer of dry grass ash is laid in the storage container, then a layer of eggs is laid on the ash. According to this, a gray layer of eggs is laid. The uppermost layer of ash should be tightly closed and covered. The use of dry fine sand instead of turf can also degenerate the egg. Every half month to check 1, generally use this method can save duck eggs about 1 year. Light salt water storage method with 5 kg of fresh water, 350 grams of salt, after boiling stir, remove and let cool. Then put fresh, undamaged, deteriorated eggs into the container and pour in the salted water until the salt water is 4 cm above the egg noodles. Eggs preserved by this method have the same taste and are eaten like fresh eggs. However, when the temperature is too high, do not use this method for storage. Lime water storage Use this method to preserve fresh eggs for 3-4 months. - General duck farmers can use it. If the quality of the eggs is good and the temperature is low, the storage period can be extended. Preparation of lime water requires 50 kilograms of water. Lime (gray block) 1-1.5 kg. The quick lime is first dissolved in water, stirred, cooled and clarified (after removing stones and other impurities, and then adding the same amount of lime), and the clarified liquid is transferred into a large cylinder or cement pool for preparing egg storage. Place the test graded fresh eggs in lime water and do not fill them, so that the lime water surface is 5-10 cm higher than the egg surface. In the lower tank (pool), if there is any suspended egg on the lime water, remove it immediately. The cylinder (pool) should be covered to prevent lime water from evaporating and falling into dust and impurities. Fresh eggs under the cylinder about 1 month. There may be a phenomenon where some eggs are floating up. This kind of egg has started to deteriorate and it is necessary to start the tank in time. During the storage period, if you want to change the temperature in the room, try to reduce the temperature when the room temperature is too high. It is best not to let the room temperature exceed 20°C. With fresh eggs stored in lime water, the shells are brittle, and they are depleted in the process of packaging and transportation, and are not suitable for long-distance transportation. This kind of egg is also easier to break when steamed and boiled, such as by using a needle to pinch one eye on the big head of the egg before cooking. This egg sometimes has a slight lime smell when eaten, but it is harmless to the human body.
